For foreigner who into Chinese cuisine, it can feels overwhelming to dive into the history and scale of this countrys food culture. Even as a Chinese,I learned a lot from this book, which answered some questions I always had when confronted by its difference with European cuisine. I particularly like how Fuschia try to search for the historical or political roots of certain features of Chinese cooking and dietary habits. and she also openly discuss the questionable elements and the declining of healthy and pureness features of Chinese cuisine in modern days. Of all her books, this one serves the most depth and introduced widest culinary styles and it's evolution.
